A spicy, flavour-rich street-style bhaji made easily at home using our ready Zestora Red Gravy. Ideal for pav bhaji or as a standalone curry!
Ingredients
- 1 cup mixed vegetables (boiled – potatoes, carrots, peas, capsicum)
- ½ cup Zestora Red Gravy (Add water or milk)
- 1 tbsp butter
- ½ tsp cumin seeds
- ½ tsp pav bhaji masala
- ¼ tsp turmeric powder
- Salt to taste
- 1 tbsp chopped coriander
- 1 tsp lemon juice
- 1 tbsp chopped onions (for garnish)
- Optional: green chilli (finely chopped)
Method – Step-by-Step
Step 1: Heat Butter & Spices
In a heavy tawa or pan, melt butter and add cumin seeds. Let them sizzle. Add pav bhaji masala and turmeric powder.
Step 2: Add Zestora Red Gravy
Pour in ½ cup Zestora Red Gravy. Cook for 1–2 minutes until it starts to bubble and release aroma.
Step 3: Mix in Veggies
Add the boiled and slightly mashed vegetables. Mix well so the gravy coats everything evenly.
Step 4: Adjust Seasoning
Add salt and a splash of water to reach your preferred consistency. Let it simmer for 4–5 minutes.
Step 5: Finish with Garnish
Add lemon juice, fresh coriander, and chopped onions. Mix and turn off the heat.
Serving Suggestion
Serve hot with buttered pav, toasted bread, or even roti. Can also be a great filling for wraps or stuffed parathas.
