Ingredients
- 2 medium green capsicums (bell peppers)
- ½ cup boiled mashed potatoes
- 2 tbsp grated paneer (optional)
- ½ tsp garam masala
- ¼ tsp turmeric
- ½ tsp red chilli powder
- Salt to taste
- 1 tbsp oil for stuffing
- ½ cup Zestora Red Gravy (Add water or milk)
- 1 tbsp oil for curry
- Fresh coriander for garnish
Method – Step-by-Step
Step 1: Prepare the Stuffing
In a bowl, mix boiled potatoes, grated paneer, turmeric, chilli powder, garam masala, and salt. Mix well.
Step 2: Stuff the Capsicums
Cut the top of each capsicum, remove seeds, and stuff tightly with the filling. Press gently.
Step 3: Cook the Stuffed Capsicums
In a pan, heat 1 tbsp oil and shallow fry the stuffed capsicums on all sides until slightly charred and soft. Remove and set aside.
Step 4: Prepare the Gravy Base
In the same pan, heat 1 tbsp oil. Add ½ cup Zestora Red Gravy and cook for 2–3 minutes until hot.
Step 5: Combine and Simmer
Place the cooked stuffed capsicums in the gravy, cover, and simmer for 5–6 minutes so they absorb the flavours.
Step 6: Garnish and Serve
Top with chopped coriander and serve warm.
Serving Suggestion
 Pairs best with phulkas, parathas, or steamed rice. Also works great with jeera rice for a weekend lunch.
